Keto Chicken Tenders


What you need

  • Thin-cut chicken breast

  • Pork Rinds

  • 2 Eggs

  • 1/4 cup Heavy Whipping Cream

  • Salt and Pepper

  • Frying Oil (I used Avocado Oil)


What to do

  • Pour about 1/2 an inch or so of oil and put over medium heat. Look to hit 350 degrees

  • Smash up the pork rinds, I crushed them by hand

  • In a bowl, combine eggs and heavy cream, whisk together

  • Cut down the chicken breasts to preferred size and season with salt and pepper on both sides

  • Check the oils temp and try to keep around 350

  • Now get to frying! Take chicken and dredge into wet mixture then pork rinds. Ensure you have even coating throughout

  • Place 3-4 tenders in the oil and let sit for 2 minutes. 

  • Flip and let sit for another 2 minutes

  • Check temp is at least 160-165

  • Serve and enjoy!
